Are historical activities acceptable?

I remember seeing somewhere that activities can be approved for 3 reasons: historical activity (demonstrable), very popular and unique from a visual point of view. I can't find where all this is written anymore. Can you help me please?

Sorry, I'm a bit confused by "activities". Can you give an example of what you mean by an activity you might want to submit?
I'm not sure what activities means but if your referring to the POI criteria then yes historical POI are acceptable. There are some exceptions. For example a historical building is currently being live in (Private residence) then that wouldn't be acceptable. Or if there a historical building that is part of an elementary school/daycare or if it blocks emergency services etc. I'm hoping that I interpreted your post correctly and forgive me if I didn't. Ah, so it sounds like "activity" might be a translation oddity? You're trying to nominate a baker that has been around for a long time.
Niantic has said that something being old doesn't automatically equate to it being historic. I don't know if Niantic said this or if reviewers decided this, but if you want to nominate it on a historic basis, then it would typically need to be granted historic status by a government agency or you need to have a really good argument for why it has historical relevance (it was the first baker in the city - did it help get the city developed by bringing in new people/businesses, maybe?). I don't know what the process is in Italy, but in the US, if a building has historic status, it usually has a plaque somewhere saying that or it is listed in an online historic database.
You might be able to submit the bakery as having cultural significance or being a "local gem", but that can be hard if you have to rely on an upgrade (as opposed to having enough local reviewers to review submissions), as you have to present a good argument to people all over the world why the bakery qualifies as what you're submitting it as.
I think a truly historic bakery is a great candidate. However, you have to prove that is indeed historic and significant for the community. Provide links to articles, tourist guides, blog posts about it.
