So I nominated a lot of spots in a village that was lacking lots of "poke stops" and all of them got reject but this one. Weirdly enough it got accepted almost immediately. Nevertheless, it never went live... Is there a way to fix this?

Your POI is an Ingress only POI. I quickly searched for the name via the Intel-map. It is in the same lvl 17 s2 cell like the POI "Columpios de Madera". Based on this, your submission wont be available in Pokemon Go. A picture will follow when approved^^
