Why do you guys censor a French word as basic as "le s"? it's litterally the plural in french for "the". Some users do not speak English or struggle to understand it so they appreciate having French answers on the forum.

Because it's a slang for lesbian (a woman loving women if that's also censored) in English.
It's a really silly censorship to have in place because I'm not sure the word has ever been used in its offensive meaning here. The only upside is that for people who don't understand French, French-speakers just look like they swear all the time, which is a bit funny.
The funny thing is that I date women and I can't remember ever hearing that particular three-letter shorthand. Maybe it's part of a particular toxic gamer subculture or something?
This forum software censors so many nonsensical things that it's actually funny when you hit a new one and have to figure out why on earth that got starred out.
It's also commonly used in Spanish with a different meaning (I don't know how to express it but it doesn't matter), so yes it seems that both French and Spanish users are always swearing.

Because lesbian isn't an offensive word and Niantic could get called out for being homophobic if they censored it. It's the same difference than between gay and f - - - - -, the later is an insult, the former isn't.
The censorship on this forum has always been ridiculous, often making innocent posts look far naughtier by censoring inappropriately.
In this case I'd consider 'lez' with a 'z' to be derogatory (and that's not censored at all) but the censored spelling is just a neutral abbreviation.

The problem with censoring is it will always pick up things incorrectly. Having words mean different things in different languages only makes it worse.

The filter also censored the name of two former Presidents of the US, an entire ethnic group, and a country's name.
I kind of feel like there's an opportunity for creative expression here. It would be fun to try to write a poem that triggers the language filters in a clever way. If anyone feels like amusing themselves with this please take the idea and run with it.
It's non-French-speakers who inadvertently swear in French. Take out "the" before many words, and you've got something else entirely. One that always sticks out to me is the way Q is pronounced. Adding or not adding "the" makes it either the letter, or @ $ $.

I have noticed that, and I wonder if the forum moderators had censored some of those words just so people don't have workarounds to cuss with, as stupid a thing as it may be.
