I’ve noticed several pokestops, including a gym have all recently disappered from the rural area nearby to where i play Pokemon Go. I was wondering if anybody could shed light on this matter for me? The help system of Pokemon Go and Wayfarer isn’t very user friendly.

Could you give some examples of what was there?
May suggest whether it’s Property owner, removal of ineligible wayspots or error…

From the co ordinates you have given it looks like this area near you is a Single Family Private Residential Property (SFPRP) and there was a cluster around those coordinates.
As such any wayspots located there are not eligible and correctly removed.
I appreciate that in rural areas it is difficult to find legitimate objects. If you would like some help please do post over in nomination support.

How do you get pokestops nominated in rural areas?
The nearest town is 4 miles away, and the roads don’t have footpaths so get flagged as not being safe for pedestrians, even though that’s where we rural folk walk…
Any advice or examples of how to play the game in a rural setting would be appreciated, or is the game exclusively for town folk only?

I can see that the area you are in is very rural as there is not even a hamlet never mind a village. Lovely rolling farmland. So it is unlikely that you will have anything close to your door.
If you get to a village, church, a village hall, a notice board, a pub, a play area, a football goal are typical things.
Official footpaths I don’t know what is available near you. Are there any survey markers? Ancient monuments? Any stables?
Presumably for most activities shopping/meeting up you have to go to a larger place. You could try and see if there are things still to submit to try and maximise that area. So that when you do go you can have a good experience, and build up resources. Gifting can help provide a supply of poke balls.
I know the grass looks greener for play in the an urban area but there downsides. There are likely to be more places but there are also a lot more players so things can be very competitive. And not everyone that lives in an urban environment can easily get out of their home to get to the stops and gyms.
The key is to try and make the best of what you have available, and adapt your play - there are lots of different ways to play.

But not every location will be eligible to have a Pokestop/gym they can access from their homes.
A fishing lake is good.
A fishing pier is also good.
If there is a bench or distinctive feature you could use as an anchor for a view. Any picnic benches?
There are several fishing Loughs nearby each of them has potential for several points
As well as the upright info board there seems to be another information board here?
