There is a way to rename a PokéStop even if the renaming has been rejected by Wayfarer?
The PokéStop in question has the wrong name due to (probably) the founder’s lack of knowledge about what exactly the building represents.
You can use an appeal on a rejected edit. That way you can provide more evidence.
You get 2 appeals, each on a 15 day counter before you can use it again.
I have used one for this reason:
They had called it a gazebo

I don’t see the appeal button available right now, as in the case of a rejected PokéStop.
You get 2 appeals and each one refreshes after 15 days. If you don’t see an Appeal button, it means you have used both and need to wait for one of them to come back.
If an Appeal is successful, it still takes 15 days from it being used for it to be available again.
