I’m hoping to find a good resource on how best to update out of date wayspots. Like a restaurant/business that has changed and hasn’t been updated.
I tried to update one today but got an auto denial so I’m assuming I am not doing the edits in order? Or do I need to ask for a wayspot removal and then submit the new one - even though they have the same location?

If a business has changed what it does, the Wayspot must first be removed, then a new Wayspot can be nominated. For example, there used to be a Cajan restaurant near where I live, but closed and a Mexican restaurant opened in its space. Being the business completely changed, I requested removal of the Cajan restaurant Wayspot, which was granted, and before I could nominate the Mexican restaurant, someone else did.
